Spekulatius

Spekulatius (note: since most Americans won't have Spekulatius molds available, I changed the recipe to use cookie cutters. If you have Spekulatius molds, by all means use them!)

In a big bowl, thoroughly stir together and set aside:

2 3/4 cups all-purpose flour

1 tablespoon cinnamon

1 1/4 teaspoons allspice

1/4 teaspoon nutmeg

Use an electric mixer, and beat together until smooth:

3/4 cup butter, softened

1 1/4 cups packed dark brown sugar

1 large egg

1 tablespoon milk

2 teaspoons vanilla

1/4 teaspoon almond extract

1/2 teaspoon finely ground lemon zest

Mix in the dry ingredients until evenly mixed. Wrap the dough in plastic and refrigerate at least 8 hours.  To bake: Preheat oven to 350 F. Grease cookie sheets. Between two pieces of plastic wrap (so the dough doesn't stick), roll out the chilled dough to about ¼ inch thick. Cut out with cookie cutters.  Put on cookie sheet and bake until the cookies get just brown around the edges, about 10 minutes. Watch carefully, though, because they can burn quickly!
