Spritz Cookies

 

1 cup butter 2 1/4 cups unsifted flour
2/3 cup powdered usgar 1/4 tsp salt
1 egg 1/2 tsp baking powder
1 egg yolk 1 tsp almond or lemon extract

 

1.Beat butter and sugar until light.  Beat in egg, egg yolk and extract.

2.Sift flour, salt and baking powder.  Gradually add flour mixture to eggs.  Chill dough 1/2 hour.

3.Press 1/4 of dough into cookies press.  Keep remianing dough chilled.  Shape cookies on greased baking sheet.  Bake in 400 degree oven 70 minutes.  Cool on wire rack.  Store in airtight tins. Makes 4 dozen cookies.
